禽蛋ω-3系列、ω-6系列多不饱和脂肪酸含量研究

Study on ω-3 and ω-6 polyunsaturated fatty acid in eggs

通过气相色谱法测定不同种类鲜禽蛋、蛋制品中ω-3、ω-6脂肪酸组成和含量，并得ω-6／ω-3比值；结果表明，强化ω—3脂肪酸鸡蛋中ω-3脂肪酸含量为450-800mg／100g，相对于其它鲜禽蛋、蛋制品类含量更高，ω-6／ω-3比值为1．5～2．4。

Study on components and content of ω-3 and ω-6 polyunsaturated fatty acid （ PUFA ）, as well as the ratio of ω-6/ω-3 in egg products by gas chromatography. It is shown that the content of ω-3 PUFA in fortified egg products is high than that in other products, ranging from 450 mg/100g to 800 mg/100g,and the ratio of ω-6/ω-3 in fortified egg products is lower than others,ranging from 1.5 to 2.4.
