PRS-LS法鉴别市售纯牛乳制品的热处理方式

摘要 本实验通过借鉴AOAC的蛋白-还原物质(PRS)测定法以及国标GB 4801-84的染料结合赖氨酸(DBL)法,对不同热处理的纯牛乳制品及其在货架期内的PRS值和赖氨酸标准(LS)值进行检测研究与分析,建立了一套鉴别纯牛乳制品热处理方式的检测方法,即PRS-LS法。应用该方法检测纯牛乳制品热处理方式的流程有两条,经样品验证,该方法可靠易行、便于掌握、实用性强,适于在国内推广应用。 The protein reducibility substance (PRS) measurement of AOAC and the dye binding lysine (DBL) measurement of GB 4801-84 were improved. According to determining the PRS and LS value of different heat treatments in pure milk products by the improved measurements, a new measurement of determination of heat treatment in pure milk products had been created, that is PRS-LS measurement. There are two flows of this measurement to determinate the heat treatment in pure milk products. The results showed that the method is easy to do and has powerly.
