钼营养与冬小麦籽粒蛋白质和氨基酸组成的关系 被引量:5

摘要 缺钼的酸性黄棕壤上施用钼肥能增加小麦全生育期植株的含钼量,大幅度提高冬小麦产量。施钼影响小麦品质,使小麦面粉的含钼量提高到0.2mg/kg以上,达到食用标准。施钼影响了小麦面粉的氨基酸组成,使不同类型的蛋白质含量发生变化。含脂肪侧链的丙氨酸、异亮氨酸和亮氨酸的比例因钼的施用而升高,但含硫的胱氨酸和蛋氨酸的比例则有所下降。施钼增加了小麦面粉的大分子蛋白质含量,减少了小分子蛋白质含量。 Molybdenum deficiency seriously affected the growth and development of winter wheat on yellow brown soils in Hubei. Wheat output was significantly increased by applying molybdenum fertilizer, and wheat quality was also improved. Firstly, the Molybdenum content of wheat powder was raised to about 0.2 mgkg, which was approximately 4 times higher than that of the check treatment; secondly the composition of amino acids was affected, Mo application caused some increase of proportion of alanine, isoleucine and leucine and some decrease of cystine and methionine. Meanwhile, the concentration of large molecular protein increased and small molecular protein reduced since Mo was added at the stage of seedling.
