摘要
为研究高山杜鹃花色素种类及其稳定性,特征显色反应和紫外-可见光谱初步表明:该花色素属于黄酮类化合物,不含查尔酮、橙酮、二氢黄酮、二氢黄酮醇,可能含黄酮、花色苷及其花色素;溶解性、耐酸碱性、耐光性、耐热性、金属离子试验表明:该色素为水溶性,不耐高温,日光照射、碱性环境及高价金属离子(Fe3+)对其稳定性影响较大。
Study on the components and stability of flower pigments specific,color reactions and UV-visible spectra indicates that the flower color pigments of Rhododehdron hybridum are flavonoids,excluding chalcones,aurones,flavanones,flavanonols and probably including flavones,anthocyanin and its anthocyanidin.Analysis on solubility,resistance to acid,alkali,light heat and valence metal ion indicates that the flower pigments are water-soluble and unstable at high temperature,under direct sunlight or in alkaline environment.The presence of high valence metal ions,such as Fe^3+,could reduce the stability of the pigment.
