摘要
经用油酸改性后的水溶性茶多酚,对大豆色拉油有明显的抗氧化作用,效能与TBHQ接近,抗氧化效果随添加量增加而加强,随过氧化时间延长抗氧化作用更显著,且对油品质量没有影响;经急性毒性试验,半致死剂量为8000mg/kg,属无毒性。
Antioxidantive effect of oil-soluble tea polyphenols(OTP) which were convertedfrom water-soluable tea polyphenols with oilic acid was Similar to that of TBHQ(tert-butylhydro-quinone) on soybean salad oil. The effect was strengthened with concentration of OTP. It was alsofound that OTP had quite good effective antioxidantive activity with lengthening the peroxidativetime,and had no harmful influence on the oil quality. LD50 of OTP was 8000mg/kg.
