摘要
以马鹿血清为原料,水解度为指标,采用单因素及响应曲面试验,对碱性蛋白酶法制备鹿血清多肽的工艺条件进行研究。结果表明,碱性蛋白酶法制备鹿血清多肽适宜条件为:血清蛋白浓度6%,反应时间5.3h,反应温度50℃,pH值为9,酶添加量为1241μ/g·蛋白,此时,鹿血清蛋白水解度约为21.37%,鹿血清蛋白多肽粉蛋白质含量为87.48%,水分为4.85%,灰分为7.42%。
Hydrolyzed deer blood serum was prepared by alkali prote ase with single factor analysis and response surface experiment Resuits shown that the optimal condition were as follows: serum concentration 6%, treating time 5.3h, temperature 50℃, pH 9, and enzyme concentration 1 241μg protein. Under this condition, the DH of hydrolyzed collagen reached 21.2%, the protein is 87.48%, water is 4.85% and ash content is 7.42%.
