摘要
为了优化酶水解猪血制备血红素的工艺条件,对猪血水解蛋白酶进行选择研究,并在单因素试验的基础上采用响应面分析法对水解条件进行优化。得出碱性蛋白酶(酶活20万U/g)水解猪血的最适工艺条件参数为:时间180min,温度55℃,pH8.0,酶用量0.18%。在此条件下水解液中血红素含量为4.18g/L。
A research for the decision of prolease was made, in order to optimize swine blood hydrolysis conditions for heine. The response surface methodology was conducted to optimize the conditions for hydrolysis based on the single factor test. The resuhs indicated that the optimum technological parameter by alkaline protease (enzyme activity 200 000 U/g)as follows: time 180min, temperature 55 ℃, and pH 8. 0, the amount of enzyme 0. 18%. The level of heine is 4.18 g/L in the hydrolysate.
