摘要
随着近代中国的社会转型,近代饮食文化也随之发生重大变化,呈现出中西餐饮文化共融并存的趋势。以张謇为代表的近代中国儒商群体,在致力于发展资本主义工商业的过程中,不断适应近代社会系统的发展态势,逐步涉足近代餐饮事业,促使近代中国的饮食文化表现出东西交流、共同发展的特点。
With the transformation of social forms in modern China, big changes occur in cuisine culture, which takes on an interweaving style of the west and east. Zhangjian, as a representative of modern Confucian Merchants, has devoted to the development of capitalist industry and commerce, the adaptation of modern social system and setting foot in catering industries, which makes cuisine culture in modern time China characterized with combination of the western and oriental styles and common development.
