摘要
红曲色素在发酵液中的积累与培养液中总糖量的关系在生产实践中被反复证实,提高初始总糖能明显提高色素产量。同时培养液的pH、总糖含量与色素的积累关系也进一步明确,菌体生长期和色素积累期更加明确。发酵生产控制的效率更有效。
The relationship between accumulation of monascus pigments in fermentation broth and total sugar was identified reduplicative that increasing of initial sugar concentration could enhance production of monascus pigments obviously. At the same time, the relationship between the pH of medium,grow period and total sugar content and accumulation of monascus pigments was farther identified,so the rate of fermentation production was raised greatly.
