摘要
以豆渣为原料,采用有机酸水溶液提取SSPS。通过对提取pH、有机酸种类、提取温度和提取时间的单因素试验,得到最佳的工艺条件:酒石酸水溶液作为提取介质,温度110℃,提取时间1.5 h,pH3.8。该工艺的蛋白质溶出率仅为2.18%,产品分子量由三部分组成,其中5.424×105为主要部分。水溶性大豆多糖得率达到27.65%。
The soluble soybean polysaccharide (SSPS)is a water-soluble polysaccharide extracted from the cotyledon of soybeans. It is a widely used natural functional ingredient with high biological activity. Extracting SSPS is one approach of the comprehensive utilization of bean dregs, a major by product from soybean processing. The SSPS was extracted in organic acid solution from bean dregs. After a series of single factor experiments,including the extraction pH,the kind of organic acid,the extraction temperature and time,the best process parameters were determined:extraction pH was 3.8,extraction media was tartaric acid aqueous solution,extraction temperature was 110℃, and extraction time was 1.5 h. Under that condition, the dissolution rate of protein was only 2.18% ;the molecular weight of product,which consists of three parts,reached 5. 424 ×10^5 ;and the yield of SSPS could reach 27.65%.
