2009年广州市与江门市餐饮业生食类水产蓄养箱养殖水微生物污染调查

Investigation on Microbial Contamination of Water in Aquatic Product Breeding Box in Catering Trade of Guangzhou and Jiangmen City in 2009

摘要 [目的]了解餐饮业生食水产品水产蓄养箱中养殖水的水质卫生情况,为今后水产蓄养箱卫生标准的制订提供参考依据。[方法]2009年4月下旬,在位于珠江三角洲的广东省江门市、广州市部分不同档次的40家餐饮单位进行调查。[结果]检测养殖水40份,菌落总数范围为6078 000 cfu/ml,中位数3 400 cfu/ml;大肠菌群范围为〈30-〉11 000 MPN/100 ml,中位数1 520 MPN/100 ml;33份检出肠道致病菌,检出率为82.50%,其中沙门菌检出率为10.00%,副溶血性弧菌检出率为77.50%。肠道致病菌检出率,广州市、江门市分别为80.00%、85.00%(P〉0.05),卫生级别A级、B级、C级餐饮单位分别为6/8、80.00%、88.24%(P〉0.05),盐水、淡水的养殖水分别为90.00%、75.00%(P〉0.05)。[结论]广州市、江门市餐饮业生食类水产蓄养箱养殖水微生物污染严重。 [Objective]To understand the hygienic status of water quality of raw eaten aquatic product breeding box in catering trade,provide reference for making hygienic standards of aquatic product breeding box.[Methods]Investigation was conducted in 40 catering units at different levels in Jiangmen and Guangzhou region located in Pearl River Delta during the last third part of April 2009.[Results]Of the 40 breeding water samples tested,the total number of colonies ranges from 60-78 000 cfu/ml,the median was 3 400 cfu/ml.The range of coli group was 〈0.3-〉11 000 MPN/100ml,the median was 1 520 MPN/100 ml.Intestinal pathogenic bacteria were detected in 33 samples,the detection rate was 82.50%,of which the detection rate of Salmonella was 10.00%,Vibrio parahaemolyticus was 77.50%.Detection rate of intestinal pathogenic bacteria breeding in water 82.5%.The detection rate of intestinal pathogenic bacteria was 80.00% and 85.00%(P〉0.05) respectively in Guangzhou and Jiangmen city.Class A,B and C health level catering units accounted for 6/8,80.00% and 88.24%(P〉0.05) respectively.Salt water,freshwater accounted for 90.00% and 75.00%(P〈0.05).[Conclusion]Microbial contamination of water in raw eaten aquatic product breeding box was severe in Guangzhou and Jiangmen city.
