摘要
何谓“有机葡萄酒”?至今国际间仍没有一个明确的共同定义。基本来说,有机葡萄酒必须采用有机种植的葡萄酿制而成,酿制时要尽量不用或少用合成化学物质,甚至在包装方面亦有严格的要求。本文主要探讨葡萄酒的一般酿制条件,并对香槟的生产过程作一简单的介绍。
Organic wines are getting more popular all over the world, especially in the Northern Europe and Japan. The basis of organic wine production is respect for the environment and the health of consumers. In this article, we review the criteria governing the production and certification of such wines, as well as the additives that are proscribed in their production.
