摘要
对HACCP系统是以食品安全角度出发,对食品潜在危害人体的危害性进行分析和定级,对可能引起危害的生产过程确定关键控制点,以防止生产出危害人体的食品。文中介绍了建立HACCP系统的七个步骤。
Proceeding from the food safety point of view, HACCP system analyzes and identifiesthe food potential harmfulness to human body,and determines the key control points ofthe production process which may cause harmfulness, so as not to produce the foodharmful to human body. The paper describes the seven steps to build up the HACCPsystem.
