摘要
果胶具有良好的胶凝和乳化作用，广泛用于轻化工业．我国北方大量种植向日葵，其盘中含有果胶，经合理加工后可变废为宝．本文通过正交实验，研究了利用铝盐从向日葵盘中提取果胶的生产新工艺．实验结果表明：所制得的果胶，其质量完全符合美国ＦＣＣ３标准．
Pectin is widely applied in light industry and chemical industry with good gelation and emulsification. Sunflower is planted in northern areas, and its plate contains pectin. If sunflower plate was put rational use, we can change waste material into things of value. The new technology of extracting pectin from sunflower plate by the aluminum salting out method is studied through experiments of orthogonal matrix. The experimental results show that the quality of the pectin is conformed to the AFCC3 standard.
