摘要
目的了解厦门市餐饮具集中式消毒机构消毒效果,探讨推广餐饮具集中式消毒模式。方法随机抽取厦门市餐饮具集中式消毒机构1 015件餐饮具进行大肠菌群检测,对结果进行统计分析。结果餐饮具集中式消毒机构餐饮具消毒合格率为89.5%;不同类别餐饮具消毒效果有一定的差异。结论餐饮具集中式消毒机构消毒效果良好,推广餐饮具集中式消毒可望有效改善中小餐饮单位餐具消毒卫生状况;同时,尚需要加强对餐饮具集中式消毒机构的监管和指导。
Objective To know the efficacy of centralized disinfection in public catering industry of Xiamen, and to discuss and popularize the centralized disinfection model. Methods Totally 1,015 eating and drinking utensils were randomly selected from catering centralized disinfection industry in Xiamen for detection of colibacillus, and the results were statistically analyzed. Results The qualified rate of disinfection of eating and drinking utensils was 89.5 %, and the qualified rates of different types of eating and drinking utensils were different. Conclusions The efficacy of centralized disinfection in catering industry of Xiamen is good. It is an effective method to improve the disinfection effect for those middle - small caterings by popularizing the centralized disinfection model. Meanwhile, enhancing the supervision and guidance for catering centralized disinfection industry should be taken.
