甘薯窖藏及其深加工技术 被引量:2

摘要 甘薯又名红薯、红苕、番薯、白薯、山芋、地瓜等,主要食用部分是地下肥大的块根,其营养丰富,可粮菜兼用,是深受大众喜爱的一种营养保健食品。甘薯根块对温度十分敏感,既怕热又怕冷。温度过高易生芽,过低易干缩糠心和腐烂,严重影响品质和后期加工。经多次试验研究,甘薯窖藏是一种成本低廉,方便宜行的安全贮藏法。现将甘薯窖藏法介绍如下。
