摘要 [目的]为沙雷氏菌红色素的结构分析和开发利用奠定基础。[方法]从一株产天然红色素沙雷氏菌培养物中提取红色素,通过薄层层析、质谱分析和光谱扫描对色素成分进行分析,并研究温度、光照、pH值、金属离子、氧化剂及还原剂对色素稳定性的影响。[结果]所提取色素中主要含有分子量分别为393.5、324.0和754,0的3种成分;色素醇溶液在535和469nm处有特征吸收峰;色素对温度和pH值3—11较稳定,对光照较敏感;Mg^2+和Mn^2+对色素具有保护作用,K^+对色素持续增色,其他多种金属离子对色素具有破坏作用;色素的抗氧化性和抗还原性良好。[结论]沙雷氏菌所产红色素被初步判定为灵菌红素类物质。 [ Objective ] The study was to lay a foundation for structural analysis, development and utilization of red pigment produced by Serratia sp.. [ Method] The red pigment was extracted from the culture of a strain of Serratia sp. which could product red pigment, and the com- positions of the pigment were analyzed by thin layer chromatography, mass spectrometry and spectral scanning. The effects of temperature, light , pH value, metal ions, oxidant and reducing agent on the stability of the pigment were studied. [ Result] The pigment mainly contained 3 kinds of composition which molecular weights were 393.5, 324.0 and 754.0 resp.. The alcohol solution of'the extracted pigment had the characteristic absorption peak at 535 and 469 nm. The pigment was stable to temperature, light and pH value of 3 - 11, but was sensitive to light. Mg^2+ and Mn^2+ had protective effect on the pigment, K ^+ had continuously hyperchromic effect on it and many other kinds of metal ions had destructive effects on it. The antioxidation and anti-reductive of the pigment was good. [ Conclusion] The red pigment produced by Serratia sp. was preliminarily considered to be prodigiosin.
