莲藕渣中不溶性膳食纤维的制备工艺研究 被引量:7

摘要 以莲藕渣为原料,利用碱结合蛋白酶的方法提取莲藕渣中的不溶性膳食纤维,通过单因素实验,结果表明,碱液浓度为5%,碱提温度为70℃,碱提时间为90min时,碱提效果较佳;而酶用量为0.3%,酶解温度为40℃,酶解时间为90min时,酶解效果较好,不溶性膳食纤维的得率可以达到26%。 Using the lotus root residues as the material,the extraction of the insoluble dietary fiber(IDF) from lotus root residues was studied through combining alkali and protease.Through the single factor experiment, the result showed that when the alkali soJution concentration was 5%, alkali extracted temperature at 70℃, for 90min, the result was better.When the amount of enzyme was 0.3%,the enzymatic hydrolysis temperature at 40℃,the time of enzymatic hydrolysis 90min,the enzymatic hydrolysis result was good, under which condition we can get 26% of insoluble dietary fiber.
