摘要
以新鲜猪血为原料,通过添加亚硝酸钠发色14h、分离血清,利用5.0%的蔗糖65℃下固色20min,再添加中性蛋白酶酶解等工艺处理后,经喷雾干燥制成红色粉末状的着色剂。通过色差仪测定,其红度值a达35以上,作为色素添加剂可广泛应用于食品和医药等行业。
Pulverous colorant was prepared using fresh hog blood by spray drying after chromagenic treatment by sodium nitrite for 14h,serum separation,color fixing using 5.0% sucrose at 65℃ for 20min, and enzymolysis using neutral proteinase. The red chromaticity could reach higher than 35 measured by color difference meter. This pulverized colorant can be used widely in food and medicine fields.
