摘要 固态发酵(SSF)中各种变量的检测对发酵过程的控制具有重要意义,但由于其培养基来源的多样和复杂性,使得这些参数不易测定。本文综述了固态发酵中采用不同传感器对环境参数(温度、pH、水分含量和水活度)和碳素平衡(生物量、底物浓度、CO2)的检测方法,并对目前固态发酵在线检测中的新技术应用,以及具有应用潜力的检测方法(X射线、磁共振成像技术等)进行了介绍。 Detection of variational parameters is significative for the solid state fermentation(SSF), but the detecting is difficult because of the variable and complicacy substrate in SSF. Different sensors were discussed in the measurement of environmental parameters (temperature, pH, water content and activity)and the carbon cycle (biomass, substrate concentration,CO2)in SSF.Application of new techniques and potential techniques( X-rays, Magnetic Resonance Imaging,et al.)of more recent methods in the on-line detection we re introduced.
