生物酶法耦合膜技术制备活性短肽的工艺研究

Study on enzymatic hydrolysis and membrane technology of preparing active peptides

摘要 主要探讨生物酶法耦合膜技术生产活性短肽的工艺中各级膜工作过程和其他流程试验,采用正交试验确定了最佳酶解条件:加酶量2%、料液比1∶4、酶解时间3h。鱼初加工的下脚料,鱼头、鱼尾、鱼皮、鱼鳞等经过该工艺过程,最终得到了活性短肽产品,86%以上肽为易于人体吸收的生物活性短肽。 This study mainly do research on membrane work process on preparing active peptide through enzymatic hydrolysis method and other technologies, optimal processing conditions for protein hydrolysate are as follows: dosage is 2%, a ratio of fish to water meat is 1:4 and enzymatic time is 3 h. Active peptide products can be obtained from fish flotsam like the head and cauda of fish, fishskin, scale, and more than 86% peptides are the bioactive peptide that can be easily absorbed by man.
