HACCP在南瓜乳酸发酵饮料生产中的应用 被引量:2

摘要 南瓜营养丰富,并含有大量的生理活性物质,对人体具有多种药用价值,提取南瓜中的有效药物成分做成保健食品和药品,长期食用具有保健防病治病的功能。南瓜具有较好的加工适应性,利用乳酸菌发酵南瓜而制成的南瓜乳酸菌饮料,不仅具有良好的风味,而且富含多种营养成分,提高了饮料的生物学价值,是一种保健功能很高的营养食品。
