摘要
以豆渣为原料,采用双螺杆挤压技术来提高豆渣水溶性膳食纤维(SDF)的含量。实验结果表明,在挤压温度为130℃,螺杆转速为500 r/min,豆渣水分含量为15%的条件下,豆渣的SDF含量从4.26%提高到18.35%。采用高效凝胶过滤法测定SDF的分子量分布,实验表明,经双螺杆挤压处理后的豆渣的SDF的组分发生了变化。
Soybean dregs was used as raw material to prepare for soluble dietary fiber by double screw extruding. The results showed that the optimum extruding conditions were 130℃, 500 r/min, water content 15%. Under these conditions, the yield of soluble dietary fiber was increased form 4.26% to 18.35 %. The molecular weight distribution of SDF was analyzed by high performance gel filtration chromatography, and the results showed that the SDF composition of soybean dregs treated by double screw extruding was changed.
