摘要 目的建立一种采用分光光度法测定乳及乳制品中羟脯氨酸含量的方法。方法参照GB/T9695.23-2008(肉与肉制品羟脯氨酸含量测定)及相关文献,优化部分实验条件,并对其线性回归关系、加标回收等进行考察。结果羟脯氨酸标准曲线的线性相关系数r=0.9998,加标回收率在85.9%~91.0%之间,相对标准偏差为2.27%。结论乳制品中羟脯氨酸分光光度检测方法方法简便、快捷、精密度好,能满足实际监测的要求。 [ Objective] To establish a method for determination of hydroxyproline content in milk and dairy products by spectropho- tometry. [Methods] Referring to the GB/T 9695.23-2008 (Meat and meat products-Method for determination of L-hydroxyprolin content l and related literatures, some experimental conditions were optimized, the linear regression relation and the recovery of standard addition was observed. [ Results] The linear correlation coefficient of standard curve of hydroxyproline was 0.9998, the re- covery rate of standard addition was 85.8% - 91.0%, and the relative standard deviation was 2.27%. [ Conclusion] The determination of hydroxyprolinc in milk and dairy products by spectrophotometry was simple, effective and accurate, and the method can reach the practical requirement.
