摘要
目的通过对南通市学校食堂实施量化分级管理前后卫生状况调查分析,了解量化分级管理对学校食堂卫生状况改善的成效。方法采用"餐饮业卫生许可审查、经常性卫生监督量化评分表",对南通市学校食堂实施量化分级管理前后的卫生状况进行逐项打分。结果实施量化分级管理后,食堂的整体卫生管理水平、基础卫生设施配备情况、食品加工过程卫生情况比实施前有了明显的改善。结论量化分级管理对促进学校食堂整体卫生水平的提高是有显著成效的,食堂在食品的采购和加工等管理环节上尚存在问题。
[ Objective] To investigate and analyze the health status befor and after the implementation of quantified and classified management of health supervision in school canteen in Nantong city, study the effect of quantified and classified management. [Methods] Based on " quantification score chart of sanitary permissive inspection and frequently sanitary supervision for restaurants" , the health status of school canteen befor and after the implementation of quantified and classified management of health supervision were evaluated. [ Results ] After the implementation of quantified and classified management, the management level, basic health facilities and the sanitation of food production process in school canteen improved obviously. [ Conclusion] The quantified and classified management has made the remarkable effect for improving the overall health level of school canteen, but there were problems in the management steps of food purchasing and processing.
