摘要
以甘肃省马铃薯生产中推广的陇薯3号、陇薯6号、陇薯7号及LK99为研究对象,在贮藏过程中定期对块茎的干物质含量、粗淀粉含量、还原糖含量、VC含量、粗蛋白含量及龙葵碱含量进行测定。结果表明,在马铃薯贮藏期内,随着窖温先高中低后高的变化趋势,块茎的干物质含量、粗蛋白含量变化不显著,粗淀粉、VC含量呈先降低后升高趋势,还原糖含量呈先升高后降低趋势,龙葵碱含量变化没有规律。
Used "Longshu No.3", "Longshu No.6", "Longshu No.7", and "LK99" from Gansu province as material, Many indexes were tested, including the content of dry material, crude starch, reducing sugar, vitamin C, crude protein and solanine in potato tuber during the process of periodic storage. The results showed that the change of tuber dry matter content and crude protein content was not significant, the trend of the contents of the crude starch and vitamin C increased firstly and decrease then, the trend of the contents of sugar content was reduced firstly and increased then, solanine content was irregular with the cellar temperature was high after high-middle-low trend.
