摘要
从水产副产物中制备天然抗氧化肽替代化学合成抗氧化剂已经越来越引起人们的关注。水产抗氧化肽具有清除自由基、抑制脂质过氧化等功效,其在医药和食品领域具有广阔的应用潜力。本文综述了水产抗氧化肽的制备及分离方法、抗氧化能力的评估方法和影响水产抗氧化肽活性的因素几方面的研究,并对其发展前景进行了展望。
The growing interest in the substitution of synthetic food antioxidants by natural antioxidant peptides has focused on their preparation from aquatic by-products. Aquatic antioxidant peptides have the effect of eliminating free radicals, inhibiting lipid peroxidation, etc. Hence aquatic antioxidant peptides have wide application potentials in the food industry and pharmaceutical industry. This article reviews the preparation and purification methods of peptides, antioxidative abilities evaluation, influencing factors of antioxidant activity. And the prospect of aquatic antioxidant peptides was forecasted.
