摘要
名优浓香型白酒所含呈香呈味物质在乙醇-水体系中形成了颗粒状微观形态。采用扫描探针显微镜对5种川产浓香型白酒进行扫描,得出了样品白酒的AFM扫描图。首次观察到了5种白酒在AFM扫描图中的不同微观形态。不同厂家所用原料不同、生产条件不同、工艺和勾兑措施存在差异,产品质量也不同,因而所含呈香呈味微量物质在乙醇-水体系中形成的微观形态也不同。
The aroma-producing and flavor-producing substances in famous Luzhou-flavor liquors represent in granular morphology in ethanol-water system. In this study, five kinds of Sichuan-made Luzhou-flavor liquor were scanned by scanning probe microscope and AFM sanning images of these liquor samples were obtained. It was the first time that the micro-morphological features of the five liquor products were observed. The analytic results proved that the difference in raw materials, production conditions and blending techniques would result in different liquor quality and different micro-morphology of the aroma-producing and flavor-producing substances in ethanol-water system.
