详细介绍了目前果蔬采摘后产地主要快速预冷方法的原理、特点和适用范围,以及相应的实用设备,包括真空预冷、强风(差压)预冷、注冰预冷、冷水喷淋预冷等,并对这些实用预冷设备的设计要点进行了阐述和探讨。
The principle, characteristics and applicable kind of fruits and vegetables of each pre-cooling technique for just harvested fresh fruits and vegetables were introduced, including vacuum pre-cooling, forced-air (presure) pre-cooling, ice injection pre- cooling, hydrawlic pre-cooling, etc,and the corresponding practical pre-eooling equipments and their main design points were described and discussed in this paper.
