摘要
介绍了火腿肠的常见质量问题,如变质、成品出油、出水、肠体脱皮、产品褪色等。并对这些问题提出了相应的解决方案,以期望提升火腿肠产品的质量。
The quality problems of ham sausage, such as decay,oil and water exudate,desquamating,cotor fading were introduced in this paper. And the corresponding solutions for these were put forward in order to improve the quality of ham - sausage.
