摘要
以青稞、黄豆为主要原料,配以青海枸杞、蜂蜜,研究开发了新型青稞黄豆复合谷物蛋白饮料。通过试验确定了最佳的工艺参数配比,理化检测结果表明,该饮料具有极高的营养价值;感官测评者一致认为所开发的含糖及无糖青稞谷物蛋白饮料,具有特殊青稞香味,饮料色泽、口感俱佳。
A new kind of compound cereal protein beverage was studied and developed with highland-barley and soybean as the main raw materials, with the addition of Qinghai medlar, honey, etc. The optimum technological parameters and formula were determined through experiments,the results of physicochemical tests indicated that the beverage had high nutritional value.After sensory evaluation,it was agreed that the compound cereal protein beverage,with or without sugar added.was characterized by the special flavor of highland-barley,and nice color and taste.
