摘要
通过添加复合增筋剂,研究增筋小米挂面的制作工艺及配方。其最佳工艺配方为小米粉100%,复合磷酸盐0.2%,海藻酸钠0.4%,谷朊粉10%,加水量30%。
By means of adding composite gluten fortifier, studied the processing of technique of millet noodle. The optimum formula: millet meal 100%, compound phosphate content 0.2%, sodium alginate content 0.4%, wheat gluten content 10% and water 30%.
