摘要 酸性电解水(AEW)是稀释的盐溶液通过电解槽电解,在阳极生成的具有氧化能力的电解水。其中电解槽的阳极和阴极被隔膜隔开。酸性电解水具有低pH(2.3~2.7)、高氧化还原电位(ORP,>1100mV)和一定的有效氯含量。与传统的消毒剂相比,酸性电解水具有杀菌高效、操作简便、安全环保等优点。作为一种新型的消毒剂,它在医疗、食品加工、农业与环保等行业广泛应用。该文概述了AEW的生成原理与特性、优缺点、杀菌效果与机理。介绍了其在食品工业中的应用以及存在的问题,同时展望了AEW的应用前景。 Acidic electrolyzed water (AEW) is produced by passing a diluted salt solution through an electrolytic cell, within which the anode and cathode are separated by a membrane. AEW, with low pH (2.3-2.7), high oxidation reduction potential (ORP, 〉 1100mV), contains free chlorine, is produced from anode side. AEW exhibits the following advantages over other traditional disinfectant., high effectiveness, easy operation, safety and environmentally friendly .As a new type of disinfectant, it is widely used in the medical treatment, food processing, agriculture and environmental protection and other industries. The generation principles and characteristics of AEW, the advantages and disadvantages and the bactericidal effect and mechanism of AEW were summarized, the application of AEW in the food industry and problems were introduced, and the prospect was forecasted.
