摘要
以红叶石楠叶片为试材提取花色苷,对其最佳提取方式及不同因素对稳定性的影响进行了研究。结果表明:用料液比1:20、2%盐酸+75%乙醇作为提取剂,在50℃下提取8h提取效果最好;pH值对花色苷稳定性影响明显,在偏酸性条件下,花色苷具有热稳定性,光线的照射能加快色素降解。
Taking the leaves of Photinia serrulata as material to study the best way to extract anthocyanin and different factors which influence its stability.Studies show that the optimum yield of the anthocyan could be obtained by 75% ethanol and 2% hydrochloride at 50℃ for 8 h. pH has the most great effect on anthocyanin which has stability of heat in sour surroundings. Lights can accelerate the degradation of pigment.
