普通念珠藻与发状念珠藻的部分营养成份分析及其开发价值的研讨

摘要 普通念珠藻(Nnstoc commune,俗称地耳葛仙米)及发状念珠藻(Nostoe flagehiforme,俗称发菜)的粗蛋白、氨基酸、灰分及9种无机盐的测定结果。研究表明,地耳和发菜的粗蛋白含量分别为20.80g/100g和20.14g/100g,含有包括8种必需氨基酸在内的18种氨基酸,第一限制氨基酸均为蛋氨酸。二者钙含量分别为2175和1717mg/100g;地耳镁含量为1067.4mg/100mg、铁含量为668.9mg/100g而居各种食物含量之首。由于地耳生长适应性强、耐干旱和盐碱,在缺粮严重的沙漠地区是值得开发利用的食物资源。 Contents of crude Protein,amino acids, ash and nine elements in Nostoc commune (地耳/葛仙米) and Nostoc flagehiforme (发菜/ black moss) were analysed. The crude protein content is 20.80g/ 100g in N. commune and20.14gl4g /100g in (N. flagehiforme) contain 18 kinds of aminoacids incl uding88 indispensable ones. Methionine ranks the first limited amino acid in both of them in The calcium content is 75mg/l00g in N. commune and 1717mg/100g in N. flagehiforme. The magnesium and iron contents in N. commune are 1067 mg/l00g and 668.9mg/100g respectively, which rank the highest among food. Because of its good growth adaptability to arid weather, or saline-alkalis soil, N, commune seems to be a valuable food resource worth exploitation in desert area with serious shortage of food.
