摘要
以猪胰脂肪酶为催化剂在无有机溶剂体系中由牛油通过甘油解反应可合成单甘油酯.研究表明,当反应温度为42℃,甘油与油脂摩尔比为4∶1,甘油中水含量为4%时获得的单甘酯含量最高,达19.51%,反应在24h左右达到平衡.将反应混合物置于常温下储存,单甘酯含量继续提高,6d后达到平衡,为28.72%.
Monoglycerides can be obtained through porcine pancreatic lipasecatalyzed glycerolysis of beef tallow without use of organic solvent.The study shows that the maximal content of monoglycerides was given when the temperature was 42℃,the molar ratio of beef glycerol to tallow was 4:1 and water content in glycerol was 4.0%,reaching 19.51%.The reaction reached equilibrium after about 24 h.The content of monoglycerides continued to increase when the reaction mixture was stored at natural temperature,reaching 28.27% after 6 days.
