摘要
广西少数民族菜肴采用原生态的原料,运用独特的烹调技艺,以干香、微辣、酸鲜、脆嫩的特色口味,顺应了现代人追求绿色、健康、长寿的饮食潮流,在桂菜中独树一帜。本文对广西民族菜肴的特点及发展现状作了深入分析,并提出了开发的对策和建议。
Guangxi ethnic minorities' cuisine, with its naturally-grown cooking materials, unique cooking techniques and various tastes ( zingy and aromatic, mildly spicy, sour and delicate, crispy and tender), complies with people's dietary trends for green and healthy food, and is an outstanding branch of Guangxi culinary culture. This paper analyzes its characteristics and status quo, and then puts forward some suggestions and tactics for its further development.
