摘要
为引导就餐者合理选择和搭配菜品,获得膳食营养平衡,保护就餐者身体健康,探讨了运用食品营养标签的相关知识进行餐饮菜品营养成分的标示,并提出了餐饮菜品营养标示的方法和营养标签的制作。研究结果表明,餐饮菜品的营养标示在传统餐饮模式下具有较好的可操作性,其方法简单,容易掌握,可以激励餐饮业对其菜品标示营养标签,促使餐饮业研发和制作出更营养的菜品。
For the purpose of guiding the diners in making reasonable and well-matched dish choices to get a balanced diet, this paper does research on the labeling of nutrient contents for dishes by applying knowledge a- bout food nutrition labels, and it provides approaches for nutrition labeling for catering dishes and the making of nutrition labels. The result shows that the nutrition labeling for catering dishes, with its simple and easy meth- od, has a better feasibility under the traditional catering model, and it can encourage the catering industry to make nutrition labels for dishes, and to develop more nutritious dishes.
