泰州市食源性致病菌污染状况的调查研究 被引量:1

摘要 目的了解沙门氏菌、单增李斯特菌、空肠弯曲菌、副溶血性弧菌在泰州市零售食品中的污染状况,为食源性疾病监测、预防提供科学依据。方法根据国标方法,对泰州市出售的生畜禽肉、熟肉制品、蔬菜、水产品中4种致病菌进行检测。结果2006年-2008年共检测样品695份,检出致病菌91株,总检出率为13.09%。其中沙门氏菌检出28株,检出率为4.03%;单增李斯特菌检出44株,检出率6.33%;副溶血性弧菌检出19株,检出率2.73%;未检出空肠弯曲菌。结论泰州市生畜禽肉、熟肉制品中存在不同程度的致病菌污染,其中单增李斯特菌污染较严重,应加强监测和检查。 Aim To understand contamination status of Salmonella, Listeria monocytogenes(LM), Campylobacter jejuni and Vibrio Phrahaemolyticus in food in Taizhou city, to provide scientific basis for supervision and prevention of food borne diseases. Methods Four kinds of pathogens from raw meat products, cooked meat products, vegetables and aquatic products were detected according to the GB and related examination methods. Results Among 695 samples, 91 strains were positive for pathogens from 2006 to 2008. The overall detectable rate was 13.09%. 28 strains were Salmonella and the detectable rate was 4.03%. 44 strains were LM and the detectable rate was 6.33%. 19 strains were Vibrio Phrahaemolyticus and the detectable rate was 2.73%. No Campylobacter jejuni was detected. Conclusion Pathogens were detected differently in raw meat products and cooked meat products. LM caused serious pollution; the supervision and detection should be strengthened.
