摘要
[目的]了解长沙县寄宿制学校食堂卫生状况,预防和控制食物中毒事故的发生。[方法]2007~2008年,对长沙县70所寄宿制中小学校食堂的卫生状况进行调查,抽取部分食(饮)具检测消毒效果。[结果]2007~2008年合计,调查70所寄宿制学校食堂。卫生许可证持证率为87.14%,201人从业人员健康证持证率为87.96%;70所学校食堂.卫生管理制度、食品索证、卫生设施、加工场所合格率分别为88.57%、65.71%、71.43%、62.86%,食品卫生管理员配备率为94.29%;2008年对56所学校食堂进行量化分级评分,A级3所,B级10所,C级43所。2007~2008年合计检测食堂食(饮)具400份,消毒合格率为80.52%。[结论]长沙县寄宿学校食堂存在一定的食品安全问题,中学食堂的卫生状况好于小学食堂。
[Objective]To understand hygienic status of boarding school dining hall in Changsha county, to prevent and control the occurrence of food poisoning. [Methods]Investigation on hygienic status of dining halls in 70 boarding middle and elementary schools was carried out from 2007-2008 in Changsha county,disinfection effect was tested for tableware samples. [Results]investigation was conducted in 70 boarding school dining halls from 2007 to 2008,87.96 % of them had hygienic licenses,87.14% of the 201 employees had health certificate. Of the 70 dining halls investigated,88.57 % of them established hygienic management rule,65.71% of them had the requirement for certificate,the qualified rate of health facilities,processing place was 71.43% and 62.86%. 94.29% of the dining halls had food hygiene control worker. The score of quantitative classification in 56 school dining halls was class A (3) ,B (10) and C (43) in 2008. 400 tableware samples were tested from 2007-2008,the qualified rate of disinfection was 80.52%. [Conclusion]There were some problems in food safety in boarding school dining halls in Changsha county, the hygienic status in middle school dining halls was better than that in primary schools.
