摘要
以发酵法制备的聚谷氨酸为原料,通过酸处理、膜过滤等方法制备低聚谷氨酸,然后用正交试验对影响低聚谷氨酸螯合钙反应的条件进行研究,获得了一种新型补钙剂.结果表明:当低聚谷氨酸与氯化钙质量比为9∶4,pH为7.0,反应温度为80℃,反应时间为60 min时,钙螯合率达到91.05%.通过比较螯合前后产物的红外光谱图,证明了低聚谷氨酸钙的生成.
Oligo (glutamic acid) was prepared from poly-γ-glutamic acid obtained by fermentation after the steps of acid treatment and membrane filtration, and the factors influencing the reaction of calcium chelate of oligo (glutamic acid) were studied to obtain a novel calcium supplement. The results show that the optimum conditions are as follows: mass ratio of oligo (glutamic acid) to calcium chloride 9: 4, pH 7.0, reaction tem- perature 80 ℃ and reaction time 60 min. Under the optimum conditions, the chelate ratio was up to 91.05%. The formation of oligo (glutamic acid) calcium salt can be confirmed by comparing the infrared spectrograms before and after chelation.
