摘要
以常规储藏大豆作对照,研究了不同温度储藏条件下充氮气调大豆品质指标随时间的变化情况.试验表明:在相同储藏条件下,温度越高,大豆品质劣变越明显.充氮气调优于常规储藏,对保持大豆的储藏品质有明显的优越性,尤其对大豆发芽率、水溶性蛋白和氮可溶性指数的降低及脂肪酸值的升高起到明显的延缓作用,而对粗脂肪和粗蛋白的含量变化影响不明显.
In comparison with soybeans in conventional storage, the change of soybean quality with time at dif- ferent storage temperatures under controlled atmosphere storage with N2 was studied. The test shows that, un- der the same storage condition, the higher storage temperature results in the more remarkable quality deteriora- tion of soybeans. Controlled atmosphere storage with N2 is better than conventional storage in keeping the stor- age quality of soybeans. Controlled atmosphere storage with N2 can effectively suppress the decrease of germi- nation rate, water-soluble protein and nitrogen solubility index (NSI) and the increase of fat acid value, but has no great influence on the contents of crude fat and crude protein in soybeans.
