摘要
详述了糖苷类潜香物质的提取、分离及分析方法;阐明了水果、烟草等植物中存在重要的糖苷类潜香物质;比较了酸解和酶解两种分析方法对植物中糖苷类物质成分分析结果的差异,酸解得到的糖苷类香味成分含量高于酶解,但糖苷配体的结构发生变化,而酶解能够全面真实地反映植物中糖苷类物质的存在结构状态。认为寻找更为有效的糖苷类潜香物质的提取、分离和分析方法是值得研究的重要课题。
The extraction, separation and analysis method of glycosides as aroma precursors were described in detail in this paper. Existence of important glycosides as aroma precursors in such plants as fruit, tobacco and so forth was expounded. The differences of analysis results of glycosides' components in plants which were performed by acidolysis and enzymatic hydrolysis method were compared. Although higher content of glycosides' aroma components was obtained by the former method, structure of glycoside ligands was changed. Existing structure state of glycosides' components in plants was more comprehensively and authentically reflected by the latter method. It is considered that searching for more effective extraction,separation and analysis method of glycosides as aroma precursors is an important and worth subject of study.
