摘要
为了保证食品安全,减少疫病疫情对人类健康的危害,提高食品产业链的透明度,世界各国相继建立食品安全追溯制度。文中在系统调查和分析中国肉羊养殖模式及肉羊养殖阶段存在的安全隐患基础上,基于GAP和GVP规范原则,以HACCP为手段,参照国内外现有的肉类食品安全生产法规、标准和指南,筛选和判定了肉羊养殖阶段的过程溯源指标和安全溯源指标,建立了肉羊养殖阶段的溯源指标体系,为羊肉质量与安全和羊肉原产地保护提供技术支持。
Many countries have established food safety traceability system in order to ensure food safety, reduce disease hazards on human health and improve the transparency of the food chain. The process traceability index and the security traceability index in sheep breeding were selected and determined on systematically investigation and analysis of the breeding model and the invisible danger. GAP , GVP, HACCP , referring regulations, standards and guidelines related to meat safety was also included in the system. Furthermore, the traceability index systems for mutton breeding were established. The results provided the technical support of the mutton safety and protecting of sheepraising origin places.
