苹果梨采前生理生化变化

PHYSIOLOGICAL AND BIO-CHEMICAL CHANGES OF PINGGUO PEAR BEFORE TAKEN OFF

研究了苹果梨采前生理生化变化。结果表明，苹果梨在采前一直没有乙烯产生，呼吸强度主要呈下降趋势，只在后期出现回升后又下降。苹果梨在采前成熟过程中，硬度不断降低，可溶性固形物和Ｖｃ含量不断增加。淀粉先增后减，可溶性糖中以果糖增加为主。苹果梨采前柠檬酸含量不断增高。

This experiment studied. The result showed that before Pingguo pear taken off no ethylent produced; respiration intensity presented falling tendency, only rising again then falling in the later period. During its maturity before taken off hardness continued falling, soluble solid and vitamin C increasing. Starch earlier increased then fell; fructose increased mainly. Content of citric acid continued insreasing, malic acid falling.
