摘要
本文用热风干燥试验台,进行了蘑菇薄层单因子与正交的干燥试验研究,得到影响干燥速度、干后产品质量的主、次因素;提出了较佳的干燥工艺和合理的性能参数;建立了薄层干燥方程;对干燥机理作了分析。
In this paper, test and research on the drying of mushroom by a convective airflow drying test-bed were made. Different effects of air temperature and airflow velocity on it were observed, the mathematical model of thin-layer drying has been found. The optimal thickness of material piece and material quantity per unit area have been obtained. The order of importance of parameters which influence the quality of mushroom after drying have been reached. The beter drying process for mushroom was provided. The drying mechanism of mushroom has been analysed.
