摘要
【目的】研究小麦麦胚的营养保健价值和广泛的加工利用途径。【方法】分析小麦麦胚的营养特性、功能特性及加工开发。【结果】小麦麦胚中多种营养成分的特异营养性和保健性。【结论】概括总结了现行的小麦麦胚加工利用途径,以期为广大研究者提供一些有价值的信息,进而加快我国小麦麦胚综合加工利用的步伐。
Wheat germ is the important part in wheat for propagating. Because of good nutrient functional value and wide application path, people pay more and more attention to it. In this paper, the nutrient functional value and the application path of wheat germ were summarized, to provide some valuable information for pursuer and step up the all - around utilization of wheat germ.
