清热解暑果冻的研制

摘要 以中药提取液与食品胶为主要原料,研制一种风味独特、清热解暑的健康果冻。按照中医理论组方,渗漉法提取有效成分,通过正交实验确定了中药材的最佳渗漉条件及果冻最佳配方。结果表明,最佳渗漉条件为:乙醇浓度60%、pH8.5、用量10倍、流速1.0mL/min;果冻最佳配方为:中药提取液12%、β-环糊精1.5%、蔗糖10%、柠檬酸0.25%。 Extracting solution of traditional Chinese medicine and food gum were used as raw material to produce a distinct flavor health jelly for clearing away heat.The optimal percolation condition and formula were determined through orthogonal experiments.As the results showed that the optimal extraction condition were as follows.alcohol concentration 60%, pH8.5, consumption 10 times, flow velocity 1.0mL/min. The optimal formula were extracting solution of traditional Chinese medicine 12%, β-CD 1.5% ,sucrose 110% ,citric acid 0.25%.
