摘要 综述了生物体内蛋白质和还原糖的美拉德反应的主要表现及其致病机制,并对生物机体内存在的美拉德反应防御机制的种类及效果进行了详细探讨。 The main type and pathogenic mechanism of Maillard reaction in the biological organisms by proteins and reducing-sugars was reviewed.The type and effect of the defence mechanism of Maillard reaction were aslo discussed.
