Research on Food-borne Pathogen Detection Based on Electronic Nose

摘要 建立了一种快速检测食源性致病菌的电子鼻方法,并利用电子鼻技术检测细菌培养液的挥发性代谢产物。首先,利用主成分分析法对所得样品信息进行区分,结果显示该技术能够很好区分不同培养时间的单增李斯特菌(L.monocytogenes),并表明在培养8h后该菌的挥发性代谢产物发生了显著性的变化。然后,利用偏最小二乘法分析了培养液中的单增李斯特菌数量与电子鼻信号的线性关系,线性范围在10^6-10^8CFU/mL之间,相关系数R^2=0.9937。 A rapid detection method based on electronic nose for food-borne pathogen had been established. Electronic nose (E-nose) was used to detect the volatile metabolites from L. monocytogenes. Principal Component Analysis method was used to distinguish all the samples. The results showed that the method could distinguish L. monocytogenes cultured at different time effectively. In addition, the volatile metabolites were obviously changed after L. monocytogene was cultured for 8 h. Partial Least Square method was applied to quantitative analysis the linear relationship between L. monocytogenes concentration and electronic nose signals. It showed that the linear range was from 10^6 - 10^8CFU/mL and the correlation coefficient R^2 = 0. 9937.
